So, I tried out the ricotta cheesecakes.  I baked a Kumquat one and a Buttermilk one.  They tasted good.  But, I don't like the texture of the ricotta cheese.  It's like eating soft sand.  And it's kind of pasty.
I've decided to bake the SAME cheesecakes, only this time I will use cream cheese in place of the ricotta cheese.  I'll let you know how that turns out.
Also, next up I will be trying a mango cheesecake!  Fun, fun!
